You helped me enable searching shadow copies a few versions ago, back in July of last year

It was working at the time but now I can't seem to get Everything to search the shadow copies...Has something changed with the different versions that could be causing this?

It's still working here with Everything 1.5.0.1295a (x64) on Windows 10 x64 1903.
GUID: \\?\GLOBALROOT\Device\HarddiskVolumeShadowCopy1

Working with the Everything Service or running as an admim.
What is the GUID, path and root for your shadow copy entry under Tools -> Options -> NTFS -> Shadow Copy -> Right click -> Edit.
Please make sure Tools -> Options -> NTFS -> Shadow Copy -> Include in database is checked.
Please make sure the Everything Service under Tools -> Options -> General is installed (or run Everything as an administrator).
What happens for you? is the shadow copy completely missing from your index?
