Sounds like a program is uninstalling or stopping the Everything Service.
or the Everything Service is crashing.

In Everything, from the Tools menu, click Options.
Click the General tab on the left.
Is Everything Service tick-checked, square-checked or unchecked?
Are there any errors reported in the Event Viewer (Start -> eventvwr)
Is there any crash reports for the Everything Service under Windows Logs -> Application?

Please try disable allow_ntfs_open_file_by_id, as this can improve stability:
In Everything, type in the following search and press ENTER:
/allow_ntfs_open_file_by_id=0
If successful allow_ntfs_open_file_by_id=0 is shown in the statusbar for a few seconds.
Type in the following search and press ENTER:
/restart
Everything will restart.
