In the Search dialog - when I type "mango" (a space) and "rocketship" Everything only shows files that have the phrase "mango rocketship" in them, and NOT all file names which contain the string "mango" AND "rocketship" (in whatever order). For some reason Everything doesn't see the "space" as a delimiter but as an absolute must-be-there and in-that-order value.
I would very much like Everything to ignore the space during searches and just return all files found that contain both "mango" and "rocketship" anywhere in their file names.
All help enormously appreciated.

Perhaps you have "Search > Enable Regex" enabled? If so then "mango" (space) "rocketship" would be interpreted as "mango rocketship", as you describe.

In Everything 1.4beta, by default (& wrongly IMO), OR has greater precedence then AND.
Everything Options | General -> Search => Operator precedence
